In a first ever collaboration, Chefs Haikal Johari and Emmanuel Stroobant, from Alma by Juan Amador and Saint Pierre respectively, will present their unique cuisine inspirations which have led both restaurants to be awarded the coveted MICHELIN star.
Alma and Saint Pierre are both contemporary European restaurants whose cuisine constantly pay tribute to Singapore flavours. For STREAT 2018, both chefs will create a special menu to truly celebrate Singapore cuisine with ingredients which are familiar to many Singaporeans.
For appetisers, Chef Emmanuel’s Tomato Confit is inspired by Asian vegetable salads with a spicy twist from Szechuan peppercorns, while Chef Haikal’s Warm Canadian Scallop is a nod towards Singapore’s favourite laksa.
For mains, Chef Haikal presents Wild Sea Shrimps, with comforting Indian flavours such as kaffir lime, and chutney. Chef Emmanuel transforms Beef Short Ribs with his unique spin on one of his favourite local cuisine, the popular Peranakan buah keluak.
Bringing your culinary journey to a close, Chef Emmanuel has prepared his grandmother’s flourless chocolate cake, and paired with Chef Haikal’s hazelnut and Chinese longan.
STREAT, the signature event of the Singapore Food Festival, is a two-day long outdoor dining event that features the best of Singapore’s cuisine and culinary talents. Headlining STREAT is a four-hands pop-up restaurant helmed collaboratively by Chef Emmanuel Stroobant (from one Michelin-starred Saint Pierre) and Chef Haikal Johari (from one Michelin-starred Alma). Visitors can also look forward to an exciting line-up of hawkers and chefs who will also be serving up traditional and modern takes on Singaporean classics in addition to culinary workshops, masterclasses, locally-inspired F&B souvenirs and a dedicated stage with local acts.
